This week, I’m sharing a recipe with you that’s perfect for the summer BBQ’s and outdoor cooking that I love so much this time of year! These Chipotle Chicken burgers have avocado, which keeps them moist during cooking.
I serve them wrapped in lettuce and topped with homemade citrus slaw, and they are SO yummy! The possibilities are endless….enjoy!
Chipotle Chicken Burgers
- 1 lb. ground chicken breast
- 1 small avocado cut into small cubes
- 1/2 onion minced
- 1 tsp dry mustard powder
- 1 tsp chipotle chili powder
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp paprika
- 1/4 tsp cumin
- 1/3 c shredded zucchini with liquid squeezed out
Instructions: In a mixing bowl, combine all ingredients except the avocado.Once the spices are thoroughly mixed into the chicken gently stir in the avocado.Form the mixture into 4 patties using your hands. Grill over medium high heat for about 5-7 minutes on each side. Make sure the burgers reach a temperature of 165° F. Serve plain, or wrapped in lettuce.
