Pear/White Chocolate Chia Seed Pudding

INGREDIENTS

  • 3 pear, peeled and diced
  • 3 cups unsweetened almond milk
  • 3/4 cup white chia seeds
  • 3/4 tsp pure vanilla extract
  • 3/4 cup vegan white chocolate
  • 2.5 tsp vegan vanilla protein powder
  • Optional:
  • 1 pear for garnishing
  • vegan white chocolate for garnishing

DIRECTIONS

NOTE: Make this dessert the night before or at least an hour prior to serving to allow the chia pudding to “gel up”

In a small saucepan, add almond milk, white chocolate, diced and peeled pear, and  pure vanilla extract and bring to a simmer (until all the white chocolate is melted)

Transfer the mixture to a blender and blend until smooth

Pour the white chocolate pear mixture and chia seeds to a glass bowl stir well and plastic wrap the bowl and then place in the fridge. Stir again 2 hours later, let sit over night.
