Fresh & Easy Salad


  • 1 large English cucumber
  • 1 avocado
  • 1 cup quinoa cooked
  • 1 plum tomato
  • 1 red bell pepper
  • 1 large carrot
  • 1 tbsp olive oil
  • 1/2 lemon fresh squeezed
  • 2 tbsp parmesan cheese grated


  1. In a medium bowl, add chopped veggies, quinoa, and drizzle olive oil, lemon, and parmesan cheese. Toss and enjoy! This healthy snack can be eaten as a lunch, snack, or side dish. Really helps with cravings to keep your blood sugar level for the day!
