Chicken tenders

  • 1/2 cup flaxseed meal
  • 1/2 cup Oat bran
  • 1 cup puffed rice Kellogg’s
  • 2 tbsp onion powder
  • 1 tbsp garlic powder
  • 2 tbsp paprika
  • 2 tbsp dried thyme
  • 4 tbsp dried parsley
  • 2 tsp salt
  • 2 tsp pepper
  • 1 cup oats rolled instant
  • 4 eggs
  • 1/2 cup fresh Lemon Juice
  • 4 boneless skinless chicken breast cut into strips


  1. Preheat oven to 350 degrees.
  2. Prepare a baking sheet by lining it with parchment paper.
  3. Combine flaxseed, oat bran, puffed rice and all spices in a food processor. Pulse until all ingredients are of similar consistency. Add oats and pulse 1-2 times, careful not to over combine into powder. Transfer dry ingredients to a large bowl.
  4. In a medium bowl, whisk egg and lemon juice until just combined.
  5. One strip at a time, coat chicken first in egg mixture, then in dry ingredients. Place chicken on prepared baking sheet. Bake for 20-30 minutes until strips are golden brown.
  6. If you want very crispy strips, broil for an extra 10 minutes.
