- 1/2 cup flaxseed meal
- 1/2 cup Oat bran
- 1 cup puffed rice Kellogg’s
- 2 tbsp onion powder
- 1 tbsp garlic powder
- 2 tbsp paprika
- 2 tbsp dried thyme
- 4 tbsp dried parsley
- 2 tsp salt
- 2 tsp pepper
- 1 cup oats rolled instant
- 4 eggs
- 1/2 cup fresh Lemon Juice
- 4 boneless skinless chicken breast cut into strips
Preheat oven to 350 degrees.
Prepare a baking sheet by lining it with parchment paper.
Combine flaxseed, oat bran, puffed rice and all spices in a food processor. Pulse until all ingredients are of similar consistency. Add oats and pulse 1-2 times, careful not to over combine into powder. Transfer dry ingredients to a large bowl.
In a medium bowl, whisk egg and lemon juice until just combined.
One strip at a time, coat chicken first in egg mixture, then in dry ingredients. Place chicken on prepared baking sheet. Bake for 20-30 minutes until strips are golden brown.
If you want very crispy strips, broil for an extra 10 minutes.
