Black Bean Sliders



  • 1 can organic black beans rinsed and drained
  • 2 cups cooked quinoa or brown rice
  • 1 red bell pepper
  • 2 cloves garlic
  • 1 small yellow onion
  • cups button mushrooms
  • 1 TSP turmeric
  • 1 TSP cumin
  • salt and pepper to taste



  1. In a sauté pan, add coconut oil until liquefied, and add bell pepper, garlic, onion, mushrooms. Sauté for 4 minutes until onions are lightly brown.
Add veggies to a food processor, along with black beans and rice; pulse until everything is combined. If you need moisture, add 2 tbsp of veggie broth.
Form into patties, and grill in a pan with 2 tbsp coconut oil. Grill 3 minutes on each side. Serve on butter lettuce, with a dollop of hummus.
